Saffron should be exceptional — or it shouldn't be saffron at all.
For most of saffron's history, the global market has been defined by compromise. Adulteration, dyeing, mislabeling, and inconsistent grading have made it nearly impossible for consumers and chefs alike to trust what's in the jar. Zaffira was created as a deliberate response — an uncompromising standard for what saffron can be, when no shortcut is taken.
Khorasan — the cradle of saffron
Our saffron is sourced exclusively from the high plateaus of Khorasan, the region recognized globally as the world's premier saffron terroir. Cool nights, mineral-rich earth, and a thousand-year agricultural tradition produce stigmas of unmatched coloring strength and aromatic complexity. No other region in the world produces saffron of this character.
Super Negin — the apex grade
Super Negin is the highest commercial grade of saffron. It consists exclusively of the longest, thickest, deepest red stigmas, with zero yellow or orange parts. Only the top 5% of each harvest qualifies. Everything else is sold elsewhere, under another name.
ISO 3632 — lab-verified, every batch
Every batch of Zaffira is laboratory tested according to ISO 3632, the international standard for saffron quality. We test for:
- Crocin — coloring strength (our minimum is 260; ISO Category I begins at 190)
- Safranal — aroma intensity
- Picocrocin — flavor depth
- Moisture — below the thresholds that preserve aroma and prevent degradation
