Saffron is one of the world's most adulterated ingredients. Dyed threads, mixed grades, false origin claims and meaningless labels are the norm — not the exception. Zaffira was created to make that the exception, not the norm.

The story behind Zaffira

For years, I bought saffron the way most people do — trusting the label. A jar from a well-known delicatessen, a premium price, a beautiful box. I opened it expecting the deep aroma and slow red bloom I remembered from family kitchens, and got pale threads that coloured the water a weak yellow and smelled of almost nothing. It happened again and again, across shops and countries. Eventually I sent a few jars to a laboratory. Most were padded with yellow styles, some were dyed, and almost none matched what the packaging claimed.

That was the turning point. I wanted to know what real saffron was supposed to be — and to prove it, not just take it on trust. I travelled to Khorasan, the high plateau in northeastern Iran that has grown the world's finest saffron for a thousand years. I spent time with growers through the harvest, watched the flowers picked at dawn and the red stigmas separated by hand the same day, and taught myself to read ISO 3632 lab reports — crocin, safranal, picrocrocin, moisture. It took the better part of two years to find growers who met the standard I was after and to build a chain I could verify from field to jar.

Zaffira is the result. Every batch is the saffron I spent years looking for and could never find on a shelf: 100% Super Negin red stigmas, lab-tested, with nothing added and nothing hidden. To me it is less a product than a promise — that when you open a jar of Zaffira, you get exactly what we say, and exactly what saffron is meant to be.

Sourcing and selection

Zaffira sources from the Khorasan region of Iran — recognized globally as the premier saffron terroir. We work with Super Negin grade, selected for long, thick, deep crimson threads with a refined aromatic profile. Only the top 5% of each harvest qualifies.

Quality verification

Every batch of Zaffira is tested to ISO 3632, the international saffron quality standard. We measure coloring strength (crocin), aroma intensity (safranal), flavor depth (picrocrocin), and moisture content. A Certificate of Analysis (COA) is available for every batch we ship. To request the COA for your jar, email info@zaffirasaffron.com with the batch number printed on the bottom of your packaging. We reply within 24 hours.

Our promise

If your saffron doesn't deliver what we say it does, we make it right. Within 30 days of delivery, contact us with photos of the threads and your infusion and we'll send a replacement or refund. No “send it back” hoops on opened product.
